About the producer
The Soul
Le Soula is simply one of the most original wine estates in the Roussillon, perhaps even in the whole of the South of France. They make still wine as if they were a champagne house. Their wines are almost always blends that change every year, sometimes dramatically, not only with the grapes used, but also with the percentage ratios of those varieties. Because they keep large quantities of older vintages, they also regularly blend vintages with each other. The quality of their vineyards is also very unique. These are usually small plots with old vines, sometimes spread very far apart. The soil always consists of decomposed granite, with the exception of a small plot on slate. They all have slightly different exposures and the altitude varies from 350 to 600 meters. The yields are low. Today, the cheerful South African winegrower Wendy Paillé is at the helm. Since 2008, the estate has been certified for organic and biodynamic agriculture.
