Pascal Jolivet

Pascal Jolivet grew up as the son of the cellar master of Château de Tracy in Pouilly Fumé, the wine region opposite Sancerre. It was clear from an early age that Pascal would also become a wine man. He always had the ambition to go his own way. This is how the Pascal Jolivet house was founded in 1987. He was aware that the terroir of Sancerre can produce the most beautiful Sauvignon Blancs. That is why he searched for three types of soil that are considered decisive for making top Sancerre. He found the very chalky soil in Bué, clay and chalky subsoil in the west of the appellation, and both 'silex' (flint) and limestone in the east. His estate now owns more than 120 hectares of first-class vineyards spread across Sancerre and Pouilly-Fumé. Pascal Jolivet's philosophy is to only use well-ripened grapes and to let nature take its own course during vinification. The natural yeast cells of the grapes do the work! Highly recommended price/quality.
