About the producer
Château de la Tour
This is one of the most walled vineyards in Burgundy, set up by the Cistercian Order in the 12th century. The real fame of Château de la Tour is due to the arrival of François Labet in 1986. Shortly afterwards, in the early nineties, he opted for organic farming. The vineyards are strictly controlled to ensure optimum ripeness and quality of the grape. François Labet therefore prefers strict pruning rather than a later green harvest. He is also a fan of fermenting whole bunches naturally, which makes for particularly characterful wines. Maturation is mainly done in new oak barrels in order to give the wines a very high storage capacity. All wine movements in the cellar, including bottling, are carried out by gravity alone (and by the way without filtration).
