Additional information vinification | The grapes are harvested by hand, destemmed and gently pressed. They are fermented in wooden barrels with indigenous yeasts. The wine then matures for about 20 months in large neutral wooden barrels. Bottled without clarification or filtration, without the addition of sulphites. |

Due to the large difference between day and night temperatures, the grapes can retain their acidity well and the wines are therefore fresh and white. |
