    Ripasso is an ancient technique in which Valpolicella wine is re-fermented on the pressed skins of Amarone and Recioto wines. In this way, the fermented skins, rich in colour, aroma and sugars, cause a second fermentation in the Valpolicella wine, improving the quality of the wine.

About the Bionda

Ca' La Bionda has been one of the best wine estates in Valpolicella for several years now. The estate was founded in 1902 by Pietro Castellani, but its level really skyrocketed thanks to the renovations and vision of the extremely modest Alessandro Castellani and his brother Nicola, who together form the fourth generation of winemakers at Ca' La Bionda. The estate has around 29 hectares of vineyards, laid out in terraces and planted with Corvina (according to Alessandro also called the Pinot Noir of Italy), Corvinone, Rondinella and Molinara. The altitude of the vineyards varies between 150 and 300 metres and so does the soil, ranging from clay via volcanic ash to limestone. In contrast to many other producers in the region, Ca' La Bionda focuses on finesse and elegance, whether it concerns the 'ordinary' Valpolicella or the much richer Amarone. The wines therefore all excel in drinkability. The use of pesticides and herbicides is out of the question. Since 2014, Ca' La Bionda has been officially certified organic.
